Cauliflower “Potato” Salad

Father’s Day is just around the corner! What usually goes together with Father’s Day? Yes, you got it…. BBQ! Eating low carb is easy for the main dish…MEAT! But what about a tasty side dish to round out the meal? Try this yummy Cauliflower “Potato” Salad submitted by one of our patients that will not rack up the carb count. Thanks Tammy L. Ingredients 1 Large head of cauliflower cut into small bite size pieces 6 Diced boiled eggs 2 Stalks diced celery 1/2 cup diced dill pickles 1/3 cup sliced green onion Some other ideas to mix in as well: crispy bacon and marinated artichoke hearts cauliflower Dressing 1 cup mayo (Trader Joe’s carries a “no sugar” mayo) Mustard (three or four squeezes) Vinegar (1-2 teaspoons) Divinci sweetner (to taste and sold at Cash- n- Carry) Celery seed (not salt but seed) Salt and pepper Directions Cut all ingredients and put in a large bowl. In a separate bowl whisk together dressing ingredients to taste then mix with the salad. I like to do this well ahead so that the flavor mingles and absorbs.
