Ingredients:
1 cup flax meal (I used golden flax meal; you could use either, I’m sure)
1/4 cup pumpkin
3 eggs
3/4 cup heavy cream
2T Torani Sugar Free Sweetener Syrup
2T melted butter (I’m sure coconut oil would be good, also)
1T baking powder (yes tablespoon)
1/4t salt
1/4t nutmeg
1/4t ground cloves
1/2t cinnamon (you could just use pumpkin pie spice, but I didn’t have any on hand so I measured out the individual spices)
Mix all ingredients together and proceed as you would regular waffles. These take a little longer to cook just fyi.
I use the Waldon Farms pancake syrup(Fred Meyer) and pour melted butter over the top. For an even extra treat I make my own whipped cream. Recipe below.
Whipped Cream
Ingredients:
6 oz heavy cream (Alpenrose brand has no additives-just cream)
2T Torani Sugar Free Seetemer Syrup (or any flavor you like)
A splash of vanilla or almond extract.
Use a magic bullet or a mixer to whip this up and plop on the top of your waffle. Add a side of Kirkland Low Sodium Bacon (this bacon does not have any sugar added) and a cup of Joe. Perfect for the cooler fall mornings.
